Raw Lemon-Poppy Seed Ice Cream (dairy free)

This recipe was inspired from the Lemon-Poppy Seed Ice Cream I tried at the Penny Ice Creamery in downtown Santa Cruz. If you are visiting downtown Santa Cruz definitely make a stop at the Penny Creamery to try some of their delicious ice creams. They focus on using local ingredients from the farmers markets. The line gets pretty long at night time! So I had my first bite of a Lemon-Poppy Seed Ice Cream and thought...hello new fav! I decided to re-create it with healthier sugars and get creative with a dairy-free version of it.

For the yellow coloring I used Tumeric, for the creaminess I used raw extra virgin Coconut Oil, & I garnished it with dried Candelula herb.

Spice up your life with Tumeric! It is one of the leading healthy foods one can consume. It is very potent in healing. In ancient Chinese and Indian cultures Tumeric was used as an anti-inflammatory food to treat many illnesses such as menstrual pain, flatulence, & chest pain. It has been shown in studies that it treats Inflammatory Bowel Disease (IBD), brings relief for patients who have Rheumatoid Arthritis, aids in cancer prevention, protects the colon, strengthens the liver, protects against Alzheimer's disease, & the curcumin found in Tumeric helps to lower LDL (bad) Cholesterol. To get the medicinal benefits of Tumeric, make sure to buy Tumeric instead of "Curry Powder" which has less Curcumin concentration. Curcumin is responsible for the anti-oxidants & anti-inflammatory properties found in Tumeric.

I might make this again next week. I've fallen in love with this one! The flavors of every ingredient used seep out and all the natural ingredients make it taste so fresh.

Recipe:
-1 cup cashews, soaked for 2 hours.
-1/2 cup water
-1 tablespoon raw honey
-15 drops Stevia extract
-3 tablespoons raw extra virgin coconut oil, melted.
-1/2 teaspoon Tumeric powder
-1 1/2 teaspoons poppy seeds
-2 teaspoons Vanilla Extract
-3 tablespoons lemon juice
-1/4 + 1/8 teaspoon of sea salt

In a high speed blender, add all the ingredients except for the Poppy Seeds and melted Coconut Oil. Blend well to get a smooth thick consistency. Then as the blender is running on slow speed, add slowly your warm Coconut Oil. Finally, add your Poppy Seeds and pulse them a couple of times, & then use a spoon to finish mixing them well into the mixture.

If you have an ice cream maker, I'm jealous. Okay, so add your mixture to your ice cream maker by following the manufacture's instructions. If you are like me and don't have an ice cream maker, you can freeze it for a couple of hours, take it out of the freezer, and let thaw to be able to scoop it out. For better texture resembling the ice cream maker, every half hour or so of being in the freezer you can give it a few stirs until you have achieved your desired consistency.
